They convert people who already found you, and they raise where you rank in the local map pack so more people find you at all. Every other lead source you pay for stops the moment you stop spending. Review volume does not.

Text the patient about an hour after they leave, while the result is still new. Route anyone who rates the visit four or five stars straight to your Google profile with one tap. Route anyone below that to a private form that reaches your office manager — so you hear about the problem before the internet does.
Add a single reminder three days later for people who did not respond. That one reminder typically doubles the response rate on its own.
